Simple Side Salad

This simple side salad comes together in minutes and is a great every-day accompaniment to weeknight meals.

Ingredients

  • 6 leaves Romaine lettuce, or lettuce of choice
  • 1/2 a cucumber, quartered lengthwise and sliced
  • 3/4 c dun pea microgreens, chopped in thirds
  • 1/4 c delicate microgreens (broccoli or kale for mild flavor, arugula for spicy)
  • 2 green onions, sliced or 1/8 c thinly sliced red onion
  • 2 tablespoons shelled pistachios
  • vinaigrette dressing of choice

Instructions

  1. Tear the lettuce into bite sized pieces and place into a mixing bowl.
  2. Add the chopped cucumber and pea microgreens. Mix to combine.
  3. Top with the delicate microgreens and pistachios.

This salad makes a great backdrop to show off a really flavorful vinaigrette dressing. Perhaps something light and lemony that’s full of fresh herbs. It’s also adaptable to incorporate leftover veggies you’re trying to use up. Cherry tomatoes, roasted red peppers, cooked broccoli or cauliflower. So many possibilities!
